Wilton Course II & III Cakes

I finished my Wilton Course III class tonight. Here is a picture of my final cake:

Course II final cake (taken with my camera phone-sorry!):

I decided to make a Scooby-Doo color flow piece rather than the standard bird one since my kids are huge Scooby-Doo fans. Next time I will follow my instructor's advice and use a tip when filling in the piece so it won't have the gaps.

Then we have my first cake for Course III:


I used Wilton's fondant because I've never tried already made fondant before, and wanted to experience what the correct consistency was. I threw all the fondant in the garbage before I served the cake of course.

I really wanted to make something with royal icing flowers for my final course III cake, but I didn't give myself enough time to dry the flowers before class, so I decided to make the standard fondant rose cake instead.

The final cake for course III was a lot of work, especially since I burnt out my hand mixer on last week's royal icing and mixed everything by hand. I made my own marshmallow fondant, and had a much better experience making it this time. Here are the flowers and cakes ready to take to class:

Very nice! I have always wanted to try marshmellow fondant! My teacher recommended it pretty much the first night. I burnt out my handmixer pretty quick too, it didn't take me long to get a Kitchen Aid Stand mixer (darn the bad luck, I had wanted one forever!) Watch the sales, especially since we are coming up on holiday season, you can usually get a pretty good deal on them! I got mine for $170 at Target last year right around Thanksgiving. I bet there are some awesome sales this year with our economy being in the shitter.

Yes!! I should have felt more sorrow at the loss of my trusty hand mixer. It was a wedding gift and made it almost to the end of 3 Wilton courses. It really was a good mixer, but all I could think was that it would give me a good excuse for a Kitchen Aid. I definitely will watch the Nov/Dec sales. My arm is still a little sore from all the fondant kneading, batter stirring, and buttercream making that I did the past couple of days, and my buttercream suffered because I didn't have the energy to mix it as long as I should have.

Wow, you did an excellent job! Way better than my cakes for those classes. :) Your fondant is so smooth and pretty!

You did an awesome job with all of those! The rose cake looks just like the one in the book. I'm kind of amused that you made the rose cake because you didn't have enough time for royal icing flowers to dry. I guess you must be a faster rose-maker than I am, because I wasted hours upon hours making all those stupid roses, and then something came up and I missed the last class, so I never made the cake anyway. I saved the roses, thinking I could use them later, but now the color has faded and they're probably dusty from sitting around for months, so I'll probably throw them out now. It's just so hard to part with something that took that many hours of my time, though, you know?

I wish! I spent a full day making those beasts! Unfortunately I didn't get a chance to make the flowers until the day before the class. I figured the fondant roses would be ok even if they weren't completely dry, but the few royal icing flowers I had made in a previous class took about 3 days to dry before they would come off the foil without breaking. I need more practice with the royal icing flowers, so it really is a shame I didn't plan better.
